How is black tea made and why is it black?
Unlike green tea, which is not subject to oxidation, black tea is fully oxidized. Black tea’s flavonoids are oxidized by aeration before the leaves dry for many hours. As a result, the tea leaves turn from green to brownish. In addition, the leaves get their own aroma. Green tea is processed to avoid oxidation, which is why it is lighter in color than black tea.
